3 Ingredient Banana Pancake Recipe [Gluten Free]

Before becoming pregnant in February 2020 I was on a bit of a weight-loss journey, and these banana pancakes were one of my go-to breakfasts as they are quick, easy, super filling and very healthy. Even now at 3 years postpartum, I still find myself making these several times a week. They are just so simple and yummy!

INGREDIENTS (MAKES 3 MEDIUM PANCAKES):

  • 1 banana

  • 1 egg

  • 1 teaspoon almond butter

  • Optional: a dash of cinnamon powder

DIRECTIONS:

  • In a bowl, mash the banana with a fork

  • Add in the egg and combine well with the fork

  • Add in the almond butter using the same fork to mix

  • Optional: Add in your cinnamon powder

  • Heat a skillet over medium heat and add in 1 tablespoon butter

  • Spoon in the batter (I usually just dump the batter directly into the skillet to make three medium-sized pancakes)

  • Cook for 3-4 minutes over medium heat before flipping and cooking for another 3-4 minutes. Note: these pancakes do not bubble up, so keep a close eye on them!

  • To serve, drizzle with honey, maple syrup or even top with jam!

  • Enjoy these super easy 3 ingredient banana pancakes on a regular basis for a quick, healthy and satisfying breakfast treat. ;)
